I judged an informal chili contest recently. Here are the winners.
1st Place Wild, Wild West Pepper and Sirloin Tip Chili-- Rob West Ingredients: 2# Sirloin Steak, cubed 1 each fresh green, red & yellow bell peppers, diced 2 qts home canned tomatoes, pureed 5 Soriano peppers, chopped Fresh cilantro, chopped (approx. 1/3 cup) 2 cans chili beans 4 Tbsp. Olde Westport Chipotle seasoning 2 cups fresh mushrooms, sliced 2 garlic cloves, crushed 2 med. Jalapeno peppers, diced 1 med. sweet Onion, chopped 1 Tbsp. cumin 4 Ancho chilies, diced 1 tsp. dried oregano 1 Tbsp. paprika ¼ tsp. cracked black pepper ½ tsp. Salt
Grill steak until done (this provides a western flavor). Combine all ingredients, except mushrooms, in a crock and cook on low heat for 5 to 6 hours. Add mushrooms and cook on high for one additional hour. Serve with cheddar cheese, sour cream, black olives, and French bread.

2nd Place Snow White and the Seven Beans Chili—Kris Palaszek 1 lb. northern beans 1 lb. mixed beans 1 ½ -2 lbs. boneless skinless chicken breasts 2 cans chicken broth 4 oz. can chopped green chilies 2 c. chopped onions 2 T. minced garlic 2 T. olive Oil 2 tsp. cumin 2 tsp. oregano ¼ tsp. cayenne pepper (or more to taste) 2 tsp. Adobe seasoning Wash & soak beans overnight. Simmer 1½ to 2 hrs. until tender. Bake or boil chicken breasts. Let cool a little and cut into cubes. Sauté onions and garlic in olive oil. Add chilies, herbs, and chicken. Add this mixture to a large pot containing the chicken broth and beans. Simmer 30 minutes Serve with salsa and sour cream to taste.

3rd Place Buffalo Roundup Chili—Trudi Lantz 2 lbs. buffalo burger 1 T oil salt & pepper to taste 2 cans red kidney beans 1 can chili-ets 1 can stewed tomatoes 1 sm can tomato sauce 1 med onion 1 bay leaf 2 t chili powder 2 t cumin 1 t Worcestershire sauce 1 jar mild all natural salsa 2 T brown sugar
Brown buffalo burger in 1 T oil till done. Add the rest of the ingredients and cook for an hour.

They all sound pretty darn good!! I'm making chili right now!!! Pretty similar to the first recipe actually.....except I'm using venison burger....my canned maters, & peppers from my garden I froze.(red & green bells, hot hungarian & jalapeno) and I used some worchestershire sauce too.

Chinese Chili
4 lbs hamburger 2 (15 oz) cans dark kidney beans 2 onions chopped 2 (8 oz) cans mushrooms 1/2 c green pepper chopped 1 tsp garlic flakes 1 c celery chopped 4 tsp dry mustard 2 qt canned tomatoes 2 tsp basil 1 c ketchup 2 tsp oregano 2 (8 oz) cans sliced water chestnuts 2 (14 oz) cans bean sprouts 4 Tbsp brown sugar 4 Tbsp chili powder 6 Tbsp worcestershire sauce
Brown hamburger and onion. Drain. Add green pepper, celery, tomatoes, ketchup, water chestnuts, bean sprouts, kidney beans, mushrooms, garlic, mustard, basil, oregano, chili powder, and worcestershire. simmer 2 hours.
